This is not "New York-Style" cheesecake. It is New York Cheesecake. It has a linzer torte (sugar cookie) crust – not graham cracker like you find on the west coast – and each standard cheesecake has a full pound of Philadelphia cream cheese in it. It's dense, creamy, and not too sweet.
The recipe was brought to us by Henry Fried, the former baker at the Claremont Diner in Verona/Montclair, New Jersey, who worked with us until just before he passed away in 1991. The Claremont was destroyed by fire in 1976, but the Cheesecake lives on, served at a few special places in New York and New Jersey. It's the same Cheesecake that was served at New York's famous Lindy's and Carnegie Deli.
